Makes enough for 10 people
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Put the listed components in a pan, bring to a gentle boil, agitating until the sugar dissolves. Next, take off the burner allowing it to cool fully. Decant into a sealable bottle, cap it and refrigerate it in the refrigerator, where it will keep for around a month.
For the Cocktail Base: Combine every spirits and syrup into one sizeable container, let it rest for one hour, then strain preferably using a fine cloth, to ensure it's fully clarified.
To serve: Add 85ml of the batch mix to a stirring glass packed with ice, and agitate gently for about 60 seconds until cold. Pour to a cold coupe glass or similar, top with the cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
